Chemically and nutritionally, Fibersol®-2 is a rich source (90% min. dsb) of water-soluble dietary fiber. This is consistent with both the American Association of Cereal Chemists (approved September 2000) and the Food and Nutrition Board of the National Academy of Sciences (published September 2001) definitions for dietary fiber.
In both cases, Fibersol®-2 is classified as "resistant maltodextrin" and in both cases "resistant maltodextrin" is classified as dietary fiber. Additionally, and in concert with these definitions, the AOAC (Association of Official Analytical Chemists) has formally approved analytical methodology ("Determination of total Dietary Fiber and Resistant Maltodextrin in Select Foods by Combination of Enzyme-Gravimetric and LC," AOAC method #2001.03), which measures digestion resistant maltodextrin.
In the U.S. nearly all people consume only half of the recommended daily amount of dietary fiber, which is 25-35 g. Fibersol®-2 can be added to formulations in amounts in excess of 50% of the daily value (>12.5 g dietary fiber) thus matching the missing dietary fiber in the U.S. diet. This allows use of nutrient content claims such as "Good source of…," "Excellent source of…," "High fiber," and/or "Rich in fiber." Health claims associated with soluble and total dietary fiber are also possible.
